Since 2005, Serrera has launched himself into the world of sparkling wines. They are conceived with the highest production techniques, thus achieving great quality, style and elegance. Their wines are the product of excellent Chardonnay grapes (70%), grown in Tupungato at 1100 m. high and Chenin (30%) of the Agrelo area at 900 m. s.n.m. Both terroirs have highly drained sandy soils irrigated with meltwater.
The production process begins with a 2nd fermentation or foaming for 38 days at a temperature of about 15ºC, thus obtaining the delicate and fine bubbles. In this process, yeasts brought from France from the Champagne Oenological Institute are used. The lees time is approximately 3 months.
The recommended "pairing" is with fish, shellfish and also red meat and the serving temperature is 2ºC.
