with predominantly sandy stony soils, % superficial gravel and calcareous

Preparation at Bodega Niven Junín-Mendoza
Cabernet/Cabernet co-fermentation
100% stemmed, 24 hours of cold pre-fermentation maceration (10°C)
Fermentation with native yeasts, in concrete vessels.
Maceration time 35 days
20% of the wine was aged in second-use French oak barrels,
for a period of 12 months.
The remaining 80% of the wine was aged in concrete vessels.
At the end of this time a cut was made to amalgamate the parts.
Tasting notes: ruby red color, the smell presents a very complex bouquet, vanilla, tobacco, red and black fruits (plum, blackberry, red and black currants, blueberries) and spicy aromas, fresh bell pepper. In the mouth it has good body and texture, provided by the terroir, with a long finish.
