FLOORS
There is a great diversity of poor soils, sandy loam, clay loam, calcareous, and sandy.
FERMENTATION
Each of the varieties was vinified separately with cold pre-fermentation Pelicular maceration for 5 days at 8° C in stainless steel tanks. Maximum fermentation temperature 30°C for 28 days. Alcoholic fermentation with selected yeasts. 100% Malolactic Fermentation.
BREEDING
Aged in French Oak Barrels for 12 months, 50% new, medium toast. Natural Clarification. Each of the wines was aged separately for 6 months. Then the Grand Cut was made, which was aged for another 6 months.
TASTING NOTES
Cabernet Sauvignon and Merlot constitute the Heart of this great cut, providing a strong spicy and elegant character. At the same time, Malbec, Bonarda and Syrah provide sweetness, volume in the mouth, and softness. Finally, Petit Verdot and Tanat provide structure and robustness. The result is an exceptional GREAT CUT, which visually presents an intense ruby red color. Its aromas are of great complexity and elegance, where notes of sweet spices, black pepper, dried figs and dried fruits appear, interspersed with notes of vanilla and cedar provided by the wood. On the palate, it has a sweet impact at the beginning, and is refreshed by a friendly and balanced acidity, with firm and robust tannins that together give it a long and very persistent finish.

Recommended to accompany grilled red meats, lamb, game meats, stews, or strong cheeses.

MERLOT: from Valle de Uco, Tunuyán, Vista Flores and Los Chacales Districts. Height of the vineyards 1,300 meters above sea level.
MALBEC: from Valle de Uco, Tunuyán, Los Arboles and Vista Flores Districts. Height of the vineyards 1000 to 1200 meters above sea level
BONARDA: from the Eastern Region, San Martín, Alto Verde and Tres Porteñas Districts. Height of the vineyards 600 meters above sea level.
PETIT VERDOT: from Valle de Uco, Tunuyán, Los Arboles District. Height of the vineyards 1100 meters above sea level.
SYRAH: from Valle de Uco, Tunuyán, Districts of Los Arboles and Vista Flores. Height of the vineyards 1000 to 1200 meters above sea level
TANNAT: from the Northern Region, Lavalle, Gustavo André Districts. Height of the vineyards 700 meters above sea level.
