WINEMAKING
A demanding selection of grains is carried out to prevent leaves from passing through the press. Once there, the entire bunch, accompanied by dry ice to eliminate the presence of oxygen, is pressed at low pressure (up to 0.8 bar) to extract the well-known wine. “gota”, we subsequently carry out a pre-fermentation maceration at 5°C, once the alcoholic fermentation begins at low temperature, with strict care of the lees. Post-fermentation, the fine lees are preserved to work on the center of the palate throughout the year.
TASTING NOTES
Of a soft pale yellow color with greenish reflections, on the nose it presents aromas such as melon skin combined with the aroma of peach, in addition to some expressions that we find characteristic of the sauvignon blanc of the area such as the aroma of wild rue. In the mouth, such an unctuous white stands out. as fresh in which its natural acidity gives it a silky and friendly finish.
