VINIFICATION: manual harvest in 300 kilo plastic bins, direct pressing of the clusters, racking or static deburring of the juice by the action of cold and enzymes.
FERMENTATION: stainless steel tank at low temperature 13-14°c, with selected yeasts.
SOILS: poor in organic matter, shallow, sandy loam with presence of pebbles on the surface, and circular stones at depth, some with calcareous deposits.
DRIVING SYSTEM: high vertical trellis (vsp) with drip irrigation. Clones: 777 – 114 – 115.
FERMENTATION: partial malolactic.
AGEING: on its lees for 6 months.
TASTING NOTES: Antonieta rosé at first glance appears to have a faint, pale pink color, with onion skin nuances. On the nose, its expression is fresh, reminiscent of acidic red fruits such as currants and blueberries, with intertwined notes of mandarin and green apples. In the mouth it has a light impact, medium body, well-balanced sweet notes, and a refreshing and juicy acidity that gives it a long and very persistent finish.
PAIRINGS: ideal to accompany glasses of fresh seafood and oysters, bruschetta, summer salads, prosciutto and burrata, fried white fish dishes, fresh salmon sandwiches, or chicken or turkey sandwiches.
